Kerehaklu’s standard process , which Pranoy refers to as a sequential washed lot, is as follows : Freshly harvested cherry arrives in the evening and are given one last round of hand sorting before being floated in a tank the same day . The water is then drained from the tank , and the coffee sits in the tank under shade overnight.
The following morning, the coffee i s de-pulped, transferred to plastic barrels , and fermented for roughly 24 hours ; this step can be done with water, with the addition of mosto, or dry . This is the biggest area of variation in Pranoy’s processing. The coffee is then put through a mechanical washer and then dried.
For this specific Selection 9 variety lot, a 20-liter starter culture was prepared using dried coffee blossoms . The coffee fermentation was inoculated with this starter after being pulped and when it was put into barrels.
