This washed Java, from Rodrigo Sanchez, that is like nothing else we've roasted in recent memory. To start our process, we found that it is being taken above 22 degrees Brix during its harvest, to leave it for 12 hours in cherry, and go to pulping during its process, and then leave it in anaerobic fermentation for 64 hours in barrels to find its exact point. It is then washed, giving way to its final stage of drying for 15 to 18 days.
