Gustavo’s farm is probably the highest farm we have ever visited. We even had to take a picture of the GPS to have as proof that we could find coffee at 2,200 meters above sea level. His sub municipality, called El Hato has a very particular microclimate which, although at the lowest temperature range possible, is able to grow coffee at such high altitudes. His farm is around 15 hectares, but he has been sub dividing it into different parcels in order for each of his son’s to have a plot of land to grow coffee and have their houses. Proud grandparents, he and his wife are usually taking care of one or two grandkids every time we visit. Due to the cold temperature of the water he uses to ferment, he  can mix different days of picking and leave coffee fermenting for longer than what is usual in washed coffee (24 hours). This, together with the varietal he grows (caturra) and the altitude at which his farm is located, leads to a very complex profile in the cup, making this grower stand out consistently in our cuppings.
