The water is then drained from the tank , and the coffee sits in the tank under shade overnight.\u003c\/p\u003e\n\u003cp\u003eThe following morning, the coffee i s de-pulped, transferred to plastic barrels , and fermented for roughly 24 hours ; this step can be done with water, with the addition of mosto, or dry . This is the biggest area of variation in Pranoy’s processing.
