The water is then drained from the tank, and the coffee sits in the tank under shade overnight.\u003c\/p\u003e\n\u003cp\u003eThe following morning, the coffee is de-pulped, transferred to plastic barrels, and fermented for roughly 24 hours; this step can be done with water, with the addition of mosto, or dry. This is the biggest area of variation in Pranoy’s processing.
