At the Mugirampeke Washing Station - a word originally attributed to a Belgian misspelling of "sorghum beer" - Burundi coffee is serious. Super serious. Product is tightly controlled by the government, down to the country's official varietal (all Burundi coffee is Red Bourbon). Cherry that's too ripe, or not ripe enough, is labeled inferior. And once the best is weeded out, it's floated, depulped, wet fermented for 12 hours, and then dried for 21 days before it's exported. By then, moisture's at about 11%, and the complex acidity and smooth sweetness that comes with it leaves the station for your cup. This isn't common coffee - only a few hundred bags make it to the U.S. every year. So enjoy it! It's an uncommon gift from an uncommon region.
