This process draws parallels to spontaneous fermentation in beer brewing, where emphasis is placed on the fermentation environment. The naturally occurring environmental yeasts play a crucial role in shaping the development of flavor compounds, resulting in a terroir-forward expression. Once fermentation is complete, the coffee is washed and dried according to very specific protocols.
